Installation on windows 2003 with a remote sql server   

Is that a way to install the UDDI service ( with command prompt for 
instance ) to use an existing SQL server instance on an other computer.

This is possible in Enterprise editions of WS03 and up. For WSO3
Standard edition, this is not possible
The UDDI has 3 components: UDDI Database Component, UDDI Web Component
and UDDI Admin Component
1. On machine with SQL, install only the UDDI Database Component
2. On machine where you have IIS, install UDDI Web Component (here you
will need to give credentials to access SQL on the database machine)
3. Admin component can be installed on any machine (even on XP through
Admin pak)

To install only a specific UDDI component:
Add/Remove Programs -> Add/Remove Windows Components -> Select UDDI and
click on details -> Select the UDDI component(s) you want to install
