Office 10, 11, 12 installed
I was looking at my Program Files and noticed that I have installed Office
10, Office 11 and Office 12.

Do I need all three since I am now using Office Enterprise 2007?

Office 12 actually is Office 2007, so you'd better not remove it.
As for versions 10 and 11, they could be just remaining components of old
installations.
As far as I know, newer versions of Office can be installed over older
versions, but in order to uninstall older versions, you have to remove the
newest ones first.
