I get some emails from people who use some kind of image in their signatures... So, every time I receive an email that has an image as part of the signature, entourage looks at it as an attachment. Is there a way yo turn that off? Whenever I actually have attachments that are important they are hard to find because every message has an attachment...

Any kind of graphic image in an E-mail *is* an attachment.

Your only option is to ask the sender to remove them from his signature. 
IMHO, graphics within signatures are very unprofessional. They are on my 
list of unprofessional things you can do with signatures.

While you may not like the appearance of attachments to every message, 
these graphics files also consume server and disk space. Branding should 
be left out of regular E-mail communications.
