Virtually the same on a Mac: File> Print> then open the Copies & Pages list. (If it isn't displayed click the button to the right of the Printer: list to expand the dialog window.) The content of the list will vary depending on your printer/driver. In that dialog there is also a Page Setup button which gives direct access to print quality. You can use that or select Page Setup from the File menu just like in PC Excel.
