Best Practices for Bridgehead Replacement?   
I'm tasked with upgrading the bridgehead server to new hardware.  What's best 
practice for this with a minimal amount of inbound/outbound email downtime?

You wouldn't have any downtime
Bring the new box on line and configure it the same as the current
one. Make sure it's in the RG and when you're ready make it the
preferred gateway. When mail is flowing out ok  you can repoint the
port-forwarding on the firewall (whatever) to the new box. Then
uninstall the old one.
