User Deleted   
If I delete a user from AD, I have it set up so the mailbox remains for 30 
days allowing me to reconect it.

If the need arrives I usually create a dummy user and assigned the mailbox 
to it in the mean time. Is there a way to simply assign the deleted mailbox 
to another user in addition to their mailbox?

No - you can connect it to only a non-mail/mailbox enabled user.
