Is it possible to have some way to have a reduntant Exchange server? Be it offsite, or on another machine in my LAN. The other week I had my Exchange Server die, and it was down for 24 hrs. I want a solution to where if somethign like that happens again, users can point there outlook to the other machine and not have to worry about losing anything.

You can have clustering - both on site and geographically diverse, you can have a product like DoubleTake which replicates at block level, or you can have something like MessageOne which allows your users to crack on with working whilst you fix Exchange.
