Migrating from Exchange 2000 single server to 2-node Exchange 2000 clustering   
What is the best way to migrate the databases?

Also, I keep reading that you have to unistall exchange 2000 from the
single server. If I'm going to retire this server and already have 2
other servers for the cluster, do I still need to do this or can I just
bring the server down?

Install the cluster in your current Exchange org, move the mailboxes and 
public folders to the cluster, and then uninstall the old Exchange server 
and retire it.

I have read that exchange 2000 clusters do not support IM. Is that
true? We are currently using that feature.
If so, is there a Microsoft IM product that can be used as an add-on in
exchange 2000 clusters even if it has to be installed on a different
box.

Live Communications Server 2005 SP1 is the product that replaces Exchange's 
IM.

Exchange 2003 does not support IM. That is true. You can use a number of 3rd 
party products or you can use live communication server.

What you need to consider is that if you let the IM concern stop you from 
upgrading, what will you do in another few years when you are outside 
support?

I'm not migrating to exchange 20003. What I'm doing is migrating from
Exchange 2000 server to exchange 2000 clustering.

So from your first answer to my question, you're saying that I should
just go ahead and ADD the cluster to my current Exchange organization.
I will have to create a First Administrative Group, storage groups and
databases with different names from what I currently have, correct?
Then, I just move the mailboxes and public folders to the cluster,
correct?

Yep. Very easy stuff, no worries. The names of the Admin Group and Stores 
will be different, because the EVS (Server Name) will be different.
