Set up the new domain's MX record(s) to point to your server - you could even use the same exact MXrecord as you use for your existing domain. All mailboxes should receive the new email address/default settings specified in the policy. I suggest you leave the old domain name in place so that you don't bounce any important mail, at least for a while. If you wish you can then remove the old domain from your recipient policy. Note that this won't remove the old SMTP addresses from the mailboxes, but they won't actually matter any longer.
