- Statistics on Exchange Server 2007: the info is logged to smtp send and 
receive logs, and message tracking logs. You need a reporting tool to 
generate reports - but it is overkill for simple reporting requirements like 
yours, imo.
- Also look at tools like LogParser.
- Antispam agent actions are logged in the agent log, use the get-agentlog 
command and scripts in the \Scripts folder in Exchange Server 2007 install 
path.
