First off, thanks for responding.
Unfortunately I missed out on that article. I performed many of the steps
within it, but missed a few.
I've been able to cleanly uninstall Exchange 2003 from our BES server.
If I was to just rebuild the server without completely uninstalling
Exchange, do you forsee any lingering issues?

Yeah you will run into problems; first when you try to rebuild and use
the same name it will error saying that exchange server already
exists. You can choose another servername however if your uninstall
was ungraceful then you will have an orphaned Exchange server which
can still cause issues such as queuing of messages and such.

Thanks for responding.
My plan is not to build up another Exchange server. I will rebuild it as a
Terminal Server and name it something else.
My Exchange 2007 server and BES are running fine. Should I still be
concerned about the orphaned 2003 Exchange server? Is there a way to clean
it from AD? I didn't see anything in ADSI.

If so you are fine. If you do not see the server object in adsiedit
then you are good.
1.Click Start, point to Programs, point to Windows 2000 Support Tools,
point to Tools, and then click ADSI Edit.
2. Expand each of the following items:
Configuration Container
CN=Configuration, DC=Domain_Name,DC=com
CN=Services
CN=Microsoft Exchange
CN=Your_Organization_Name
CN=Administrative Groups
CN=Your_Administrative_Group_Name_Or_Exchange5.5_Site_Name
CN=Servers
If you do not see your server here you are fine.

I don't see it listed. So I guess all's well. =)
It's just weird. When I go into Add/Remove Programs, Exchange is listed. I
try to uninstall, but it fails.
Anyway, I'm not going to worry about it. I'm just going to blow it away and
built it up from scratch.
