FWIW, we're having this problem too in SP1 Update Rollup 2, with both
incoming and outgoing mail: a big problem, as some of our webforms generate
tab-separated lines that are designed to be pasted into Excel (the paste
totally breaks if they're spaces instead). Interestingly, for mail that is
completely internal to the Exchange organization, this doesn't happen - must
be an SMTP issue.
I opened a case with PSS about this, and learned that there is a hotfix
available for UR1. The fix was neither included in nor forward-ported to
UR2, so the only immediate solution is to roll back to UR1 and then request
the fix from PSS.
This is also supposed to show up as part of UR3 for SP1 by mid-August, if
you can wait until then.
If interested in the fix, ask PSS about KB 945870. It isn't public yet but
they should be able to reference it by that number.
