In regards to the actual adjustments to the Exchange Server (2003), if
you're using the iPhone 2.0 Enterprise Beta which has Exchange built-in as an
option for mail accounts, do you still need to enable IMAP, open those ports,
etc.?
Were your instructions above based on the lack of an Exchange option on the
iPhone & the tweaking needed in the past to make mail work?
I'm looking for the whole 9 yards of the integration with iPhone 2.0,
including Calendars, Contacts, Mail, & remote wipe (deleting your device
remotely if it's lost).
Please reply, I need to get this info asap.

I'm afraid I don't have that info yet. Sorry, I'm a Blackberry dude myself
and I do support WM devices as well, but haven't seen an iPhone 2.0 yet.
If the iPhone 2.0 is truly doing ActiveSync, then it should configure just
like any other WM phone I would think.
Best bet would be to check the Apple forums or wherever people post for the
beta.
Here was an interesting tidbit I picked up while looking:
The iPhone 2.0 software provides a configuration utility that allows IT
administrators to easily and quickly set up many iPhones, including password
policies, VPN setting, installing certificates, email server settings and
more. Once the configuration is defined it can be easily and securely
delivered via web link or email to the user. To install, all the user has to
do is authenticate with a user ID or password, download the configuration
and tap install. Once installed, the user will have access to all their
corporate IT services.

So hypothetically, being that the iPhone 2.0 Enterprise has ActiveSync
built-in & licensed, there's nothing needed to be done on my server,
including enabling my Exchange 2003 to sync with this mobile device, even on
a user level.
In regards to the utility, I had no luck finding it in the Apple Beta
Restricted Downloads nor on Google.
If anyone knows this, please let me know. This will determine if I'm
upgrading to 2.0 Beta 5 tonight or sticking with 1.1.4 for now & using the
2.0 beta via the iPhone Simulator in my SDK / XCode.

As of this post, iPhone's latest public firmware release is 1.1.4.
The upcoming 2.0 firmware supports direct Exchange integration via ActiveSync.
I'm a member of the iPhone Development Program & have been running 2.0 for
quite some time & I'll say this: When I get an Exchange E-mail, my iPhone
chirps before my Outlook on my PC does.
That's how fast the Push is, even on Edge.
Also, 2.0 allows you to work with Push for other e-mail protocols, not just
Exchange.
2.0 is due July 2008.
