Can't seem to find a clear answer, can Exchange 2007 Standard house roles on more than one server?   
I know that you can't have say a Mailbox server clustered, but it's
not clear anywhere as to whether or not the standard edition requires
all roles to be on one server for standard edition.

No, there's no such requirement. You can distribute the roles on both 
editions, or have all supported roles on the same box.
The only roles that can't co-exist with any other Exchange Server 2007 
server roles are the Clustered Mailbox Server (CMS), and the Edge Transport 
server.
Clustered Mailbox Servers (CMS) using either SCC or CCR can be setup only on 
Enterprise Edition.
