Additional Mailbox Stores   
What are the steps to create and use a second or third store for mailboxes
and how do I move the mailboxes to another store.

depends on which version of Exchange you have.

Standard or Enterprise?

Standard you don't create additional stores.  It doesn't support them.

Enterprise edition you should create an additional storage group with ESM 
and then within that create an additional mailbox store.  Once the store 
exists and is mounted, you can use ADUC to right click on a user or users 
and select Exchange tasks and move the mailbox to another store.
