Only the printer in question can answer that. We can't speak to the
abilities or price structure of any given printer.
If the question is, "Can a commercial digital printer do this?", the
answer is "yes, a printer can do this". But no one other than the
printer himself can guarantee that he WILL do that, or has bought the
capability to do that.

Yes. What you just described is called "reader's spreads". When the
printer arranges the pages of your document onto his printer sheets in
such a way that it makes sense for production, he calls that "printer's
spreads".
