Just a quick example: Task 'Build Walls' is due to run from 6th October for 15 days and Bob is assigned to do the work. However, Bob is on leave from 13th October for 5 days. I'd like Joe to build the walls while Bob is away enjoying himself, and for Bob to pick the work back up and complete the job when he returns on 20th October. Not automatically which I guess is what you are actually asking. There is no way that the application can know that you only want Joe to work on the task whilst Bob is away hence you will have to enter that information yourself. You don't have to enter multiple tasks. If you assign Bob to the task then the task will be scheduled around his leave (if that has been programmed in). You can then just allocate Joe to the same task for Bob's absence.
