I have Word 2007.  How do I flip text for iron-on transfers?

Word doesn't offer any built-in way to do this. Although there are 
workarounds, your best bet is to first examine your printer Properties for a 
setting labeled "Mirror image," "Flip horizontal," "T-shirt transfer," or 
the like.
