Journaling with SharePoint Server

I'm running exchange 2007 and I would like to setup journaling of all
mailboxes to a separate server. Can I do this with Sharepoint Server 2007? If
so, could you provide any documentation on how to do this?

Where can you enter email addresses that are considered safe and should not
be rejected by spam content filtering?
Using POP3 and IMAP, so syncing with Outlook is not an option. I could
probably do it in OWA, but I would like it to be a global safe recipient to
all mailboxes.
