How to hand New columns with a snapshot DW approach

We have a data warehouse using a "snap shot" approach. We have monthly
loads where we ETL the current picture of contracts.
What is best practice when new columns are added inside the DW, for the old
snapshot loads?
Simple Example:

Package Config on Backup Database Task

All my connections are dynamically set at run time to run against

The Backup Database Task doesn't seem to have a "Server" property where I
can tell it "what" server to backup. How can I dynamically set what server
to backup with this task?

How do I move Olap dir?
