MS Project 2007 not accepting constraints

Can someone tell me what is going on when I change a constraint type and date
and the date remains the same? I've deleted the task and added back and it
still will not accept the new constraint date. Btw, I'm going from an SNE
date in Oct 08 to a Must Finish On date in Oct 2010.

Can I establish start and finish time for specific task?

Does MS Project 2007 have the capabilities to input a start and finish time
for a specific task in conjunction with the Start and Finish dates?
Example:
Task 1-Excavate Dirt- Monday Oct 1. 07:00hrs to 12:00hrs
Task 2-Build forms- Monday Oct 1. 12:00hrs to 14:00hrs
Task 2-Form Rebar- Monday Oct1. 14:00hrs to 1 ...

I am using MSP 2003. My schedule includes trades as resources (ex:
welders, mechanics, etc). We are working on a two shift schedule that
goes from 7:30-17:30 and 18:30-4:30. I have defined the work day as:

I created a year-long schedule that I printed on a 3' x 2' arch D-sized
paper. My client likes having the schedule on one page but he can't read the
text as it's too small.
I'm going to enlarge the text in the task information cells, but will the
name that is to the right of the bar on the Gantt chart also ...
