Help with methodology

Hi im sure this isnt the easiest way to do my task so im asking if someone
could help me out here.
Task: create a chart for each workforce group with 3 series showing. Total
workers hours, part-time workers and fulltime workers against date.

how do I sort and filter by different criteria

I have input all my recipes into excel and I want to be able to sort them by
category, ie. according to type of food, rating, ease of preparation, etc.
The whenI tried to sort by clicking on the category title, only that column
sorted and it messed up the data because the rows didn't match up. I'd like

rounding up or down

I need a formula the will round numbers up and down as this is for a golf
society numbers ending in .5 are rounded up (don't ask me why this is done !!)

Problem opening excel files

Charting in Excel 2007

I want to create a chart from 4 out of 5 columns of data in excel 2007 and
they are not consecutive.
They are labeled: Date,q1,q2,q3 and q4.
I would just like to use the columns labeled: Date,q2,q3, and q4.
I am not using column q1.
Any thoughts?

Smaller worksheet

Good day,
I am working with Excel 2003. When opening a new worksheet, it has more
row & columns then I require for a sheet I am creating. I would like to
reduce the size of the worksheet to 14 columns and 150 rows. What would
be the best way to do this.

More function than FLOOR() !

I have a problem for an excel formula. I want to convert 1 to 0, 2 to 0,......
.., 10 to 0. And convert 11 to 10, 12 to 10,............, 20 to 10.
I know the formula of FLOOR can have this function, however, it will convert
10 to 10, 20 to 20 which is not I want. What I want is to convert 10 to 0, 20
to 10, ...
