Page Numbers won't use style-driven chapter numbering

I have a template with custom heading styles based on native Word
Heading 1, 2, 3... styles. The page numbering must include Chapter
Numbering, e.g, Chapter One's page numbering must appear as I-1, I-2,
Chapter 2's as II-1, II-2, etc.
However, the only options I am presented in the Page Number Format

I have a large document that is manually put together from smaller individual
Word documents. When I make changes to the smaller documents to update them,
I need to be able to change the page numbers so that they will fit into the
larger document. How can I change the page numbers to whatever I want?

In earlier versions of Word it was easy to select a word. Click to surround
it in an outline, then go to Borders and Shading and fill it with a shade
that was behind the text. (I used this often to represent a software button
in the middle of a paragraph of text.)

Multiple Pages in Print Layout View

I was pressing ctrl + (unknown) - accidentallty... and my print layout view
went from one single page to multiple pages. This is on Printe Layout View
and not in Print Preview - essentially the same effect you can get in print
preview when switching from one page to multiple page.
I don't know how to get ...

Mixed pages

I am at a loss here. I have a document in which I want to have the first 2
pages be 81/2x11 and the last page to be a #10 envelope. I am able to get
the document created, but when it prints, it all prints on envelopes.
